This series of recipes are from two little books that have 365 recipes, one for every day of the year, from 1900 and 1903. The first is;

Cracker and Jam Pudding.
Soak half a cup of cracker crumbs in a cup of milk. Rub ½ a cup of sugar and a tablespoonful of butter together; add juice and rind of half a lemon, then add the yolks of three eggs, next the soaked crackers, then the beaten whites. Butter a baking dish; cover the bottom with a layer of jam; then the pudding. Bake half an hour. To be eaten cold.
Chocolate Souffle.
Grate 1 oz of chocolate and mix it with the yolks of 3 eggs and 2 ozs. Of powdered sugar. Beat the whites to a stiff froth. Gently stir the whites into the above mixture, put it by the tablespoonful of a souffle pan and bake a golden brown in a moderate oven. Dust it with powdered sugar when it is done or it will fall.
