Carmichael CA 1918 – the 60’s
Filled Cookies
½ c. short 1 c. sugar 2 eggs
½ c. butter 3 ½ c. flour ½ c. milk mixed with 1 tsp. soda
2 tsp. cr tartar 1 tsp. van
Roll out thin & put filling between 2 cookies.
Filling
1 c. dates, figs, raisins or jelly or jam
½ c. sug little water 1 tsp. van
Thicken with little flour.

Short = shortening; cr = cream (cream tartar); van = vanilla; sug = sugar; tsp. = teaspoon; c. = cup

Sugar Cookies
1 c. shortening
1 ½ c. sugar
3 eggs
3 c. sifted flour
2 teaspoons baking powder
1 ¼ teaspoons salt
1 teaspoon lemon juice
½ teaspoon vanilla
Cream shortening & sugar thoroughly; add well beaten eggs, lemon juice & vanilla. Sift flour, baking powder & salt together; add to cream mixture. Place dough in refrigerator & chill for several hours. Roll out thin on a floured canvas; cut any desired shapes, bake 12 to 15 minutes in a moderately hot oven 375degrees. Remove cookies as soon as sheet is taken from oven.
