Saratoga Chips
Slice thin in cold water. Salt when hot.
I am guessing this is a recipe for potato chips; from 1875 no less! Not sure why they are called Saratoga Chips unless that is where they were invented.

In 1853 a gentleman cooking in a restaurant named Crum invented the chips when requested by a patron to slice the fried potatoes thinner. He eventually started his own restaurant and then sold “Saratoga Chips” in to go boxes as a treat to take home.
They are still sold at the website listed above.

Oatmeal Ice Box Cookies
1 cup shortening
1 cup white sugar
1 cup brown sugar
2 eggs
1 ½ cups flour
1 tsp. soda
1 tsp. salt
3 cups of oats
1 tsp. milk
Wrap in wax paper and put in ice box overnight, break off small pieces and press with fork on the cake sheet. Will spread when they begin to bake.
