Tomato Egg Salad
Soften 2 tsp. gelatin in 3 tbsp. cold water, heat to boiling point a mixture of 1/3 cup pet milk, 2 ½ tbsp. water, stir in gelatin, let stand at room temp. Mix together and stir into mixture 2/3 cup fresh tomatoes, 2 chopped hard cooked eggs, 1/3 cup finely cut green pepper, 3 tbsp. vinegar, ¾ tsp. salt, ½ tsp. dry mustard. Chill until syrupy. Rinse with cold water ring mold to hold about 1 ½ pints. Chill until firm. Turn out on lettuce, garnish with hard cooked eggs. May be made in small moulds or cups. 1 tbsp. finely chopped onion may be added with tomatoes.

It has all kinds of lovely handwritten dessert recipes; the front of the book has an overview of each month and a predictive weather chart, the difference of tie between Boston and New York, the value of gold and silver at the time and other interesting things like rates of postage.
