Tomato Catsup

For four or five quarts of catsup, boil one peck of ripe tomatoes fifteen minutes, without removing the skins, and strain through a sieve; put into a little bag one teaspoonful of whole cloves, one tablespoonful of ground cinnamon, allspice and black pepper, and put these with a pint of good vinegar into the strained tomatoes, and boil the whole carefully from three to five hours; when sufficiently boiled and condensed, stir in one tablespoonful of ground mustard and one teaspoonful of ground cayenne pepper, salt to taste, and keep in well-corked bottles.

Ginger Bread                                                      Francis (good)

1 cup brown sugar

2 eggs not separated

1 cup boiling molasses

1 cup hot water

1 cup lard

1 tsp. allspice

2 tsp. cinnamon

3 tsp. ginger

4 cups flour

1 tbsp. soda

Sauce (use instead of whipped cream)

Mix 3 tbsp. flour with 2 cups brown sugar, add 1 pts milk to butter size of a walnut.  Cook until thick.

Cool.  Cook 1 cup raisins, drain, when cool add to sauce then add 1 cup chopped walnuts. 

(tsp. = teaspoons; tbsp. = tablespoons; pts. = pints; butter the size of a walnut = 1 tablespoon)
