Holiday Foods 2022: December 17, Early 1900’s; Potato Candy, Eagle Brand Chocolate Fudge, Taffy & Penuche
Buriens, Washington 1920 – 1950
Potato Candy
½ c mashed Pot (potatoes)
1/8 t. salt
1 lb. sifted P. Sugar (powdered sugar)
½ t. vanilla
1 c pnut butter (peanut butter)
Mash potatoes, add P. sugar & salt. Roll out on board sprinkled with powd. Sugar, spread with pnut butter. Roll up like cinnamon rolls – slice.

Eagle Brand Chocolate Fudge
2 c. sugar 3 sqs. Unsweetened chocolate
1 c. water 1 c. nut meats
1 c. Eagle Brand Sweetened Milk
Mix sugar & water in a large pan & bring to a boil. Add Eagle Brand milk & boil over low flame until mixture will form firm ball when tested in cold water. Stir mixture constantly to prevent burning. Remove from fire, add chocolate cut in small pieces. Chop nut meats & add. Beat until thick & creamy. Pour into buttered pan.

Taffy
2 cups syrup
1 cup sugar
2 tablespoons vinegar
Butter the size of an egg
Flavor to suit taste.
Boil till it hardens when dropped in cold water. Pour on buttered plate & cool til it can be handled, then pull.

Penuche
3 c. light brown sugar
1/3 c. milk or cream
1 T. butter
¾ c. chopped nuts
1 t. vanilla
Put sugar, milk & butter into sauce pan, boil with as little stirring as possible until it makes a soft-ball in cold water. Take from fire, add nuts & vanilla; beat until thick & pour into greased pan.
