Chocolate Cake
Bake any light cake- one half and stir in grated chocolate arrange it in pans with the other half same as for marble cake.

Dropped Sugar Cakes Mrs. Foltz
3 cups of sugar 2 gran. 1 brown
½ pt. of shortening.
1 pt. of thick milk
½ teaspoon of soda in milk
3 eggs.
3 ½ teaspoons baking powder
5 cups of flour or enough to make stiff enough to drop.
(gran. = granulated or white sugar; pt. = pint; thick milk, I think is condensed milk)
3 ½ teaspoons of baking soda is a lot, these will rise quite a bit and I think be more like a cake than a cookie, which does reflect the name of these. These could be more like the type of cookie you get with something like a moonpie, the kind you can sandwich a filing between and not have it mush out when you bite into it like it does when you use a harder type.
What we know as cookies today were often called drop cakes or small cakes. The word cookie comes from a Dutch word Koek (cake), also koekje which means little cake and in the early 1700’s is transitioned into cookie here in America. The earliest reference to the word “cookie” is in 1703 in New Amsterdam (now known as New York), a Dutch colony, in a newspaper of the time it quotes; “The Dutch in New York provided…. ‘in 1703… at a funeral 800 cookies…..”
In Europe the crunchy or crisp ones are most often called biscuits, which to Americans can be confusing because what we call biscuits are an entirely different type of baked good.
The soft chewy ones in England are sometimes called cookies or soft cakes.
