Valentines Day February 14th in the 1950’s Meringues, Queen of Hearts Dessert, Marshmallow Pie & decorating Ideas

This is from a large lot of notebooks filled with handwritten recipes from 1940’s through 1950’s.  Several are in shorthand and it includes a lot of life lessons and advice.  These are from Columbus, Wisconsin, written by a Mrs. Corinne Christians. She has all kinds of Holiday special recipes and notes as well as decoration ideas.

Valentine Dessert                                        Martha Crane

Serves 10-12

Queen of Hearts

1st part 4 egg whites 1 c. sugar

1 t. c. tarter, Meringue

Cookie sheet – brown paper lined.

Trace heart shapes on paper, pipe meringue on shapes.  270 degrees – and – bake.  Cut cardboard heart slip meringue on these. Cool.

Lemon Filling

4 egg yolks, 5 t. lemon juice, 1 t. lemon peel, ½ c. sugar, 1 c. whipping cream.  Beat yolks, add juice etc.  Cook till thick, cool. Fold in cream.   Spread over meringues.  Tint coconut red by putting in glass jar with few drops of coloring – shake jar; Decorate edges with coconut.

Chill 12 – 24 hrs.

Valentine Meringues

4 egg whites, 1 t. c. tarter, ½ t. vanilla, ½ t. salt, 1 c. sugar.

Separate eggs while cold let whites warm to room temperature add c. tartar, vanilla & salt & beat til stiff peaks (should not loose shine) add sugar 1 t. at a time and beat well as you add.  Keep doing this til sugar is all dissolved.  Use brown paper – heart shape.  Run under water faucet and put on cookie sheet.  Mold meringue on heart – make thick on sides open in middle – Bake 250 degree 1 ¼ hrs.  Cool peel off paper.  Fill with fresh berries or ice cream or cherry custard or cherry gelatine.    

Marshmallow Pie

½ lb. marshmallows

½ c milk ½ pt. whipping cream.  Melt marshmallows in milk – slowly cool – Fold in cream (whipped) Turn into graham cracker crust.  Few crumbs over top, Chill.

Valentine Parties

Snow – heart shaped mold

1st pink 2 green 3 white

Recipe – 1 env. Gelatine ¼ c water (5 min) Dissolve stir into 1 c. chilled apple sauce 1 t. lemon juice.

Beat:

2 egg whites ½ t. salt. 6 t. pow sugar (very stiff) fold in apple sauce – divide in 3 pts. Green (almond) pink (cinnamon or vanilla)

Valentine Ideas

Meringue shells in shape of heart – tint pink – serve with ice cream & berries. 

Cut cheese with heat shaped cutter.

Coconut cream pie with heart shaped crusts, red jelly on top.

Cranberry jelly & white grapes

1 – Decorating Tables

Valentine – coat hanger heart shape. (no hook on) 4” cellophane strips press tightly over wire.  Put in large tray – flowers or ball shape at base – or hanger covered with ribbons & plastic lace – put in holder & fill base.
