Moll Puffs (maybe Small Puffs or Milk Puffs)
1 cup milk
½ cup sugar
1 egg
1 teaspoon cinnamon ½ (?)
1 teaspoon soda dis, (dissolved) in ½ cup boiling water
2 tablespoons melted butter
2 large coffee cups flour
Bake in (it is either “your rims” or “your tins”) buttered & greased.

2 level tablespoons Knox’s gelatine
½ cup cold water
2 cups boiling water
½ cup sugar
½ cup mild vinegar
2 tablespoons lemon juice
1 teaspoon salt
1 cup finely shredded cabbage
2 cups celery cut in small pieces
2 pimentos cut in small pieces or ¼ cup red and green sweet pepper.
Soak gelatine in cold water five minutes add boiling water, sugar, vinegar, lemon juice and salt.
When mixture begins to stiffen add remaining ingredients, turn into wet molds and chill.

As an ongoing feature here, I will add to this each day the recipes out of several books I have that are dated or from calendar books
I have three right off the bat that are calendars, one from 1875, one from the early 1900’s and one from the 1930’s to 40’s.
A small leather covered calendar book from Burlington Vermont dated 1875. It has all kinds of lovely handwritten dessert recipes; the front of the book has an overview of each month and a predictive weather chart, the difference of tie between Boston and New York, the value of gold and silver at the time and other interesting things like rates of postage.
