July 10th, Traditional Christmas Dutch Cake Bakette, Almond Pastry

This is an unusual sounding dessert I found in this set of cookbooks.  Doing some research, it seems this is a traditional Dutch recipe for an almond paste filled pastry called Banketstaaf; also spelled Banquette and Banket.  Sounds very good.

Bankette

For ingredients you’ll need: 1 cup butter, 2 cups all-purpose flour, ¼ cup water, ¾ cup almond paste, 1 egg, slightly beaten, ¾ cup sugar, and ¼ cup cornstarch.

1 Cup butter into flour until there are fine crumbs add water gradually, chill

2 Blend almond paste, sugar and cornstarch, add egg. Chill.

3 Divide dough into four portions, roll each into rectangle 4 x 12 inch.

4 Shape almond paste mixture in four rolls about 11 inches long.  Shaping roll on floured cloth makes them easier to handle. 

5 Place roll of almond paste on pastry rectangle.  Brush one long edge of dough with water.  Roll pastry around filling rolling towards wet edge.  Pinch ends together.

6 Place on ungreased baking sheet seam side down.  Prick top; bake at 400 degrees for 15 minutes then at 325 degrees for 20 minutes. 

I got these from Carmichael California, but the location places in the notebook, several say Oxford Michigan, from a set of handwritten books with the dates starting in 1908 and going through the 1960’s. 

This nice set of loose papers and two handwritten books has some very interesting family history in the older spiral notebook; she has listed recipes and the names of the contributing person as well as the date and their age when they passed away.
