July 11th, Almond Wafers 1940’s or 50’s
Almond Wafers 4 doz.
1 ½ cup fine granulated sugar
¾ cup shortening
¾ cup margarine or butter
Pinch salt
Dash vanilla
3 egg whites.
1 1/3 cups sifted flour
1 2/3 cups ground blanched almonds
Preheat oven to 385. F.
Cream sugar, shortening and butter together until light, about 7 minutes at medium speed. Add salt, vanilla and egg whites, and mix until smooth. Fold in flour and ground blanched almonds. Drop in rounds on cookie sheet. Bake until slightly brown on edges, about 10 minutes. Sandwich wafers together with praline filling.


I do not have recipe for the praline filling, so I guess you could find one or just use some other kind of filling. This is one from the same book, but for another type of filled cookies.
Filling
1 c dates, figs, raisins or jelly or jam
½ c sug little water 1 tsp van
Thicken with little flour.

I got these from Carmichael California, but the location places in the notebook, several say Oxford Michigan they are from a set of handwritten books with the dates starting in 1908 and going through the 1960’s.
This nice set of loose papers and two handwritten books has some very interesting family history in the older spiral notebook; she has listed recipes and the names of the contributing person as well as the date and their age when they passed away. I will add these statistics as I go through the books.
