Canned Tomatoes         (Mrs. Kauffman)

Have plain water boiling drop in tomatoes, cover, let boil until thoroughly heated through, put in tin cans and seal with either sealing wax or putty.  If put in glass jars, add 1 teaspoon of salt to a quart jar.  No salt for tin cans.  For the tin cans take a little lard on the finger and run around the inside of the can and don’t fill cans to full.  Very good recipe. 

Corn for Winter Use    R.B.A.

(I use this recipe with success)

Clean corn as for table use.  Have water boiling, drop in ears of corn and boil for 4 minutes.  Lift out and cut grains off and scrape the cobs.  Take 4 cups of corn, 1 cup of sugar, 1 cup of salt.  Mix until salt and sugar are thoroughly dissolved.  Put in stone crocks, cover with a moistened white cloth, weight with a saucer or plate, tie up with a cloth and paper to keep dust out. 

Take any required amount desired for a meal; soak until salt remains as taste desired.  Heat with butter, pepper and milk.  Easy to fix and very, very good.
