Chocolate custard
Scald 1 pint sweet milk with 1 square chocolate and pinch of salt. Add ½ Tb. Corn starch mixed with ½ cup sugar & yolks of two eggs, cook until it thickens, add vanilla, when cool cover with meringue.

Ethan’s Mince Meat
4# green tomatoes, coarse ground, drain, scald & drain
4 # apples – ground (coarse)
¼ # butter (can use oleo or suet)
½ cup cider vinegar 1 ½ teaspoon cinnamon ground
1 teaspoon ground cloves
¾ teaspoon ground nutmeg
Pc. Citron size of orange
1 ½ cup seeded raisins (1 box will do)
2 heaping cups brown sugar (1#)
½ teaspoon salt
Bring coarse ground tomatoes to scald & drain; then add to other ingredients. Cook slowly 1 ½ hrs. Bottle in sterilized jars. Yield about 4 qts.
