November 6th, 1912 Cocoa Sauce and Lemon Crumb Pudding

Cocoa Sauce
½ cup water
½ cup sugar
1-3 cup cocoa
Pinch of salt
Put the water and sugar into saucepan, stir until dissolved put on fire and boil five minutes; add cocoa which has been mixed with cold water to make a paste; boil slowly for ten minutes and add salt.
Lemon Crumb Pudding
2 cups dry breadcrumbs
2 cups hot milk
¾ cup sugar
3 tablespoons lemon juice
1 teaspoon grated lemon rind
1 egg
Pinch of salt
1 teaspoon butter
Put the crumbs in a bowl; pour over the hot milk, add the salt, well-beaten egg, sugar, the grated rind and juice of lemon; mix well. Brush bake dish with a little butter; put in the mixture and bake 40 minutes in a slow oven. Serve plain or with hot lemon or prune sauce.
