Holiday Treats

Albany New York 1902 through 1940’s 

Christmas Fudge                          

3 cups gran. Sugar

¼ teaspoon cream of tartar

¼ teaspoon salt

1 cup thin cream

1 tablespoon butter

1 ½ teaspoon vanilla

½ cup chopped nut meats

¼ cup chopped dates

¼ cup candied cherries

Place sugar, cream of tartar, salt and cream in a large saucepan. 

Stir until thoroughly combined.  Place over low flame and bring slowly to a boil – stirring frequently – just before mixture comes to a boil wipe sides of pan carefully with a damp cloth.

Boil with out stirring until soft ball forms in cold water or until candy thermometer indicates 234 F. to 367 F.

Remove from heat – add butter – Cool with out stirring until lukewarm (110 F.) – add vanilla.  Beat until thick & creamy – add nut meats and fruit & pour quickly into buttered pans.  When cool cut into squares. 

Oxford Michigan 1908 through 1960’s 

Apple Snow Balls                     

6 large apples

1 pint milk

Sugar

6 cloves

1 teacup rice, cooked for 1 hour.

Peel 6 large apples & core.  Put into each apple 1 clove & as much sugar as the apple will hold.  Cover outside of each apple with a good coating of boiled rice, & tie each one in a cloth that has been dipped in hot water.  Boil until apples are tender, usually ½ hour.  Arrange on a dish & sprinkle powdered sugar on them.  Serve with whipped cream or any sauce. 

Holiday Cookies

Oxford Michigan 1908 through 1960’s 

Almond Wafers            4 doz.                  

1 ½ cup fine granulated sugar

¾ cup shortening

¾ cup margarine or butter

Pinch salt

Dash vanilla

3 egg whites

1 1/3 cups sifted flour

1 2/3 cups ground blanched almonds

Preheat oven to 385.F

Cream sugar shortening and butter together until light, about 7 minutes at medium speed.  Add salt, vanilla and egg whites, and mix until smooth. 

Fold in flour and ground blanched almonds.  Drop in rounds on cookies sheet.  Bake until slightly brown on edges, about 10 minutes.  Sandwich wafers together with Praline filling.         

Rice Krispies Marshmallow Squares                          

1/3 c. butter

½ pd. Marshmallows (2 ½ doz.)

½ tsp. vanilla

1 pkg. Rice Krispies (5 ½ oz.)

Melt butter & marshmallows in double boiler.  Add vanilla; beat thoroughly to blend.  Put Rice Krispies in large buttered bowl & pour in marshmallow mixture, stirring briskly.  Press into shallow buttered pan.  Cut into squares when cooled.
