Snow Pudding with Sliced Peaches                       

3 tablespoons lemon juice1 teaspoon grated lemon rind

Whites of two eggs

2 tablespoons granulated gelatine

½ cup sugar

Soak the gelatine in two tablespoons of cold water for five minutes; dissolve in 1 ½ cups boiling water to which the sugar has been added; stir until dissolved; add the lemon juice and rind; set aside to cool.  Beat the whites of eggs until dry, place in pan of cold water; add the gelatine slowly, beating constantly until it begins to set. Pour (this is all the instructions left in the book, but my guess is to pour over the sliced peaches in a mold and let it set.)
