Coos Bay Oregon 1925 – the 40’s
German Potato Cake
1 cup hot freshly mashed potatoes
1 cup shortening
2 cups sugar
3 sqs. Chocolate (3 oz.)
1 ¾ cups flour
2 tsp. baking powder
1 tsp. cinnamon & ½ tsp. nutmeg
½ cup milk
4 eggs
1 cup coarsely ground nuts. (almonds)
Beat hot potatoes until very light, add shortening & beat again. Sift sugar twice. Add gradually to potato mixture & beat well. Add melted chocolate. Sift flour once before measuring. Sift flour, B.P. & spices together. Add alternately with milk. Add well beaten eggs. Add the nuts. Bake in layers, 45 minutes.

Potato Caramel Cake
¾ cup butter
2 cups sugar
2 ¼ cups flour
2 teaspoons baking powder
1 cup mashed potatoes
½ cup sweet milk
4 eggs
1 cup chopped walnuts
2/3 cup chocolate (grated)
¼ teaspoon each of cloves, nutmeg and cinnamon
Cream sugar and butter, then put in eggs and other ingredients. Use sweet chocolate.
This makes three layers.
