Use pastry flour, best of shortening and have everything as cold as possible and handle as little and as lightly as possible. The lightness depends on the amount of air inclosed and in the expansion of that air in baking. Flakiness depends on the kind and amount of shortening. Butter gives a better flavored crust, lard a flakier crust. The two combined gives best results. Pastry should be baked in a hot oven and is much improved is allowed to stand on ice before baking.
