Easter Hot Cross Buns 1894

Hot Cross Buns                     

2 quarts flour (I think)

½ pound dried currants

1 pound chopped raisins

1 cup sugar

1 egg

1 yeast cake

1 ounce caraway seeds

1 tablespoon salt

1 oz. citron1/4 pound lard

Mix at the start, kut in crisp thing except the egg.  Mix at 5 P.M. then at 9 add melted lard and well beaten egg.  Knead the whole, cover it, let it alone for the night.  In kneading use lukewarm water.  The dough ready for the oven the first thing in the morning.  Currant buns or biscuit may made instead of loaves.
