May 5th 1932
Meat Patties in Casserole (Good)
2/3 lb. of ground beef (sausage or fresh canned meats may be used)
1/3 lb. of ground cured ham
1 cupful of cooked rice
1 beaten egg
1 teaspoonful of prepared mustard
Salt and pepper to taste
Thick slices of large onions (about 3 onions)
2 cupfuls of canned tomatoes or fresh tomatoes, cut in halves.
Mix the ground meat, rice, egg, and mustard together. Season with salt and pepper. The ground meat may be varied, depending on what is at hand. Shape the mixture into patties (make about 10 to 12 patties) Arrange in a deep casserole or baking pan, place a thick slice of onion and a portion of tomato on each patty. Bake in a moderate oven for one hour.
(P.S. I would omit the mustard.) Oh yeah!
