Refrigerator Cookies     

Sift 3 cups of all purpose flour with 1 teas. Of baking soda and 2 teas. Salt.  Measure 1 cup shortening into a large bowl, beat it well (high speed (?) until very soft.  Slowly add 2 cups gran. Sugar while beating, until creamy and light.  Break 2 eggs one by one in a saucer, add each unbeaten.  2 tablespoons vanilla, beat well (high speed elec.) until well blended.  Then add sifted flour mixture a little at a time, beating (low speed elec.) add 1 cup coarsely chopped walnuts or pecans; stir until well mixed.  Turn on a large piece waxed paper, shape in a roll (firm) about 2 in”. Wrap tightly.  Chill overnight or for as long as a week.  When wanted unwrap, slice 1/8” or ¼” thick with a sharp knife (sawing) Arrange 1” apart on greased cookie sheet 375degrees, 10 or 15 min.  Makes about 50 cookies, may be halved.
