Sheffield UK 1899 – 1928 

Curled Gingerbread            

One pound of treacle, one pound of raw sugar, one pound of flower (flour), half a pound of butter and a little ginger. 

Why this is called Curled, I am not sure? 

Brown Gingerbread                               

1 ½ lb. flour, 1 lb. treacle, 1 lb. sugar (course), ¼ lb. butter, 1 oz. ginger; rub the butter in the flour, then the sugar and ginger, mix all together with the treacle, roll it out thin, cut with a wine glass and bake in rather a slow oven. 

White Gingerbread

¾ lb. flower, ¾ oz. ginger, 6 oz. butter, one lb. sugar, 1 oz. candied peel, rub all together till very fine, the rind of a small lemon, put it on the tin in crumbs to bake. 

White Gingerbread                              

Boil 3 lb. of good raw sugar, with half a pint of water about two or three minutes; when nearly cold mix it with 4 ½ lbs. of flour, 1 ½ lb. of butter, 1 lb. of sugar, rub the sugar and butter together and then rub it into the flour, 10 oz. lemon peel cut small, 3 oz. ginger and as much (?) salts as will lay on half a crown, mix all well together and bake it in a slow oven, butter your tins.

When you have boiled the sugar two or three minutes, put a drop to cool, and if it will pull a thread with your finger and (?) it is boiled enough. 

Gingerbread Snaps                         

1 ½ lbs. of flour, 1 lb. of coarse sugar, ½ lb. of butter, 1 ¾ lbs. of treacle, 2 oz. of lemon peel, 1 oz. of ground ginger and a wine glass of brandy.  Mix all together and spread on tins. 

Gingerbread Nutts                                         

Take 2 lbs. of treacle, ½ lb. of butter, melt them together, then add 3 basons of dried flour, 1 ½ oz. of ground ginger, 1 tablespoonful of Baking Powder and a teaspoonful of salt.  Beat very well up with a wooden spoon, Bake on buttered tins in small round lumps, push down with the finger.     

Gingerbread Loaf                                        

1 lb. of flour, 1 lb. treacle, ¼ lb. sugar, 1 oz. carraway seeds, 1 gill of new milk, 1 teaspoonful carbonate soda.
