Handy Pastry Mix
Keep a batch on hand for emergencies
8 cups Kitchen Craft flour
4 tsp. salt
2 2/3 cups shortening or lard
Sift flour, measure; sift again with salt. Cut shortening into flour with knives or pastry blender until particles are size of small peas. Store covered in a cold place. Use pastry mix in proportion of 2 2/3 cups mix; add 4 to 5 tablespoons cold water gradually, mixing lightly with fork just until mixture holds together. Wrap in waxed paper; chill before rolling out. 2 2/3 cups mix makes two fluted 9-inch pastry shells or one 2-crust 9-inch pie. Whole recipe adequate for eight fluted pastry shells, or four 2-crust pies.
This would be a great blend to keep in the fridge or freezer for those emergencies when you need to make a pie but do not have a lot of time.
