Savory Noodles & Pork

¼ lb. uncooked egg noodles (or 1 cup)

¾ lb. pork butts – ground

2 small onions, chopped

2 cups chopped celery (?)

1 raw well-seasoned (?)

Tomato soup (1 1/3 cups)

1/3 cup water

¾ cup grated cheese (1/4 lb.)

1 tsp. salt 1/16 tsp. Pepper

Cook noodles until tender,15 min in 1 ½ qts. Boiling water, drain.

Brown meat in 1 tbsp. drippings.  Add onions and celery and cook 10 min.  Mix meat, onions, celery and cooked noodles together.  Add tomato soup, water, grated cheese, salt and pepper.  Place in a buttered casserole and bake (or let simmer in a sauce pan on top of stove).  Bake 45 min.  350degrees.  Serves 6.

A small leather covered calendar book from Burlington Vermont dated 1875.  It has all kinds of lovely handwritten dessert recipes; the front of the book has an overview of each month and a predictive weather chart, the difference of tie between Boston and New York, the value of gold and silver at the time and other interesting things like rates of postage.
