Avondale Pennsylvania 1912

August 9th 1912

Bitoch with Mushroom sauce                       (Elsie)

1 lb. veal ground

1 onion chopped

1 cup soft bread crumbs

½ cup milk

1 tsp. salt (?)

Pepper

2 tbsp. fat

1 cup water

1 can mushroom soup

Mix veal, onions, bread crumbs, milk and seasoning and form into cakes.  Brown in the ft, transfer to covered dish.  Pour off excess fat, add water and stir until brown in pan is dissolved.  Add soup and stir until blended.  Pour over veal patties and cover.  Bake in moderate oven for 30 min. at 325degrees.

A small leather covered calendar book from Burlington Vermont dated 1875.  It has all kinds of lovely handwritten dessert recipes; the front of the book has an overview of each month and a predictive weather chart, the difference of tie between Boston and New York, the value of gold and silver at the time and other interesting things like rates of postage.
