January 18th, 1875 Cream Pie and Crust

Burlington Vermont 1875

Cream Pie Crust

3 eggs

1 cup sugar

1 ½ cup flour

1 ½ cup cold water

½ teaspoon cream tarter

½ teaspoon soda

This is a little difficult to interpret this recipe, the measurements for the flour and water seem to be the same, 1 ½ cup, but if you use this much water it will be very mushy and you will not be able to roll it out as a pie crust.

Maybe redact it for yourself, I have not tried this recipe, it could work.  But my thought is to just add the water a ½ teaspoon at a time until you can just make a ball of dough.  Pie crusts are best if not handled too much.  But adding that much leavening to a crust is unusual as well; I think this will have to be an experiment to see how it all actually goes together.

Cream for pie

1 pint milk

2 eggs

Tablespoon flour

1 cup sugar

Lemon.
