Yesterday I posted a Victoria Cake in the calendar section for the day March 22nd 1885; these cakes celebrated the Queen of England, Victoria, who up to that time was the longest Reigning Monarch in England. (Next to Queen Elizabeth) Of course now, the currant Queen Elizabeth has outdone her by several years.

The Victoria Sponge is still a very popular cake and almost everyone in England knows what it is. While here in the US not many of us would have a clue what it is. (Unless you happen to watch British TV shows, such as the very popular Baking show)

Today they are typically a light sponge cake split in two, then filled with a whipped cream or a custard and sliced strawberries then topped with more cream and whole strawberries.

On 1 May 1876, she adopted the additional title of Empress of India. Known as the Victorian era, her reign of 63 years and seven months was longer than that of any of her predecessors. It was a period of industrial, cultural, political, scientific, and military change within the United Kingdom, and was marked by a great expansion of the British Empire.”

Glenburn Maine 1850’s through 1920’s a wonderful handwritten, generational cookbook with several different writing hands. 

A recipe dated March 21^st 1885 for Mrs. Holland; in a nice little handwritten cookbook from Havertown Pennsylvania.
