First Day of Spring 1950’s, Spring Chocolate Torte & Easy Spring Dessert

Spring Chocolate Torte – party type

1 c. butter, creamed with 2 c. sugar; beat 4 egg whites stiff, 2 ½ c. cake flr. 1 t. soda, ½ t. salt.  Pour ½ c. boiling water over 1 bar german sweet choc & heat til melted; add 4 egg yolks & 1 t. vanilla to creamed mixture & beat, add choc mixture & mix.  Alterenate flr mixture & 1 c. buttermilk; fold in whites (stiff batter)

Pour into 2 greased sq. pans (9”) bake 45 min. at 350degrees.

Filling

1 c. evap. Milk, 1 c. sugar, 3 yolks, ¼ lb. butter, 1 t. vanilla; cook about 12 min. til, add 1 can flake coconut & 1 c. nuts, whip 1 pt. cream & add ¼ c. sugar, 4 t. instant coffee & 1 t. vanilla & spread over all or just on sides. 

Easy Spring Dessert

Pot luck or large crowed

13×9” pan

1 pkg. yellow cake mix – prepared as usual, add rind of 1 lemon & 1 orange & ½ c. flake coconut.  Mix 1 c. sugar & juice of 1 orange & 1 lemon & pour over cake while hot.  Serve with whipped cream.

A large lot of notebooks filled with handwritten recipes from 1940’s through 1950’s.  Several are in shorthand and it includes a lot of life lessons and advice.  These are from Columbus, Wisconsin, written by a Mrs. Corinne Christians.
