One Dish Meal from Arabia

3 tomatoes, diced

French dressing

1 cup lentils, soaked

1 cup rice

8 slices bacon, sautéed

3 onions, minced

Marinate tomatoes in French dressing for 3 hours in refrigerator, drain lentils and cook covered in one quart of boiling water with 1 teaspoon salt for 30 minutes, or until just soft.  Wash rice & cook in 2 qts. boiling water with one teaspoon salt 20 minutes or until just soft.  Drain lentils & rice, combine; keep hot.  Sauté bacon, drain on paper & chop.  Sauté onions in remaining bacon fat, drain & add with bacon to rice & lentils.  Serve at once with cold tomatoes as sauce. 

Four to six portions.

I got these from Carmichael California, but the location places in the notebook, several say Oxford Michigan (Mildred Sternberg, 1940 Died 1972, recipe is for a Lemon Sherbet), from a set of handwritten books with the dates starting in 1908 and going through the 1960’s. 

This nice set of loose papers and two handwritten books has some very interesting family history in the older spiral notebook; she has listed recipes and the names of the contributing person as well as the date and their age when they passed away.   I will add these statistics as I go through the books.
