Ham and Cheese Rarebit (serves eight)
¾ lb. American cheese
1 can tomato soup
Slices of bread toasted
1 green pepper diced
1 cup diced leftover ham
1/8 tsp. salt
1/8 tsp. pepper
½ cup water
¾ cup evaporated milk
2 tsp. butter
(Method) Put evaporated milk, water, tomato, salt and pepper in the top of double boiler. Add the pepper dices. Cut cheese into small pieces and add to this mixture. Thicken with a paste made of the flour and water. Serve on toasted rounds of bread. A garnish of strips of pimento adds to the attractiveness of the dish.

A small leather covered calendar book from Burlington Vermont dated 1875. It has all kinds of lovely handwritten dessert recipes; the front of the book has an overview of each month and a predictive weather chart, the difference of tie between Boston and New York, the value of gold and silver at the time and other interesting things like rates of postage.

August Cooler
Boil 4 c water & 2 c sug tog. 5 min. Add 2 c fruit juice: (pineapple, orange, grape, grapefruit, cranberry) add 4 T lemon juice, unless you used unsweetened grapefruit. Freeze. When partly frozen, remove & whip till smooth. Refreeze. Serve in tall glasses w gingerale poured over. Serves 4 to 6.
