Welsh Rarebit recipes from all over 1850’s through 1950’s
This is a follow up posting to go with the recipe from 1875.
This is a very interesting recipe; it appears in almost every cook book in some form or other. It is also known as Welsh Rabbit, which somehow morphed from the rarebit. There is no meat in this recipe, it is mostly a blend of cheeses, milk and sometimes Beer, on top of toast. Sometimes it has spices added, such as paprika, but I think these are additions of each individual cook and just depends on how they have learned to make it.
I have recipes for it that go back into the early 1800’s, I really do not know how old it goes.
I remember Mom serving this for dinner as a kid in the 1950’s and 60’s, I loved it and often wondered why we never had it after the late 60’s.
