Here are a couple of recipes to use the mincemeat recipes from yesterday’s holiday recipes. 

Mincemeat Fruit Cake             

1 cup butter, 2 cups sugar, 2 eggs, 1 pkg. mincemeat, 1 cup nuts, 2 cups flour, 2 teaspoons vanilla.

Cream butter & sugar, adding the eggs gradually.  Cut up the mincemeat, chop the nuts, sift a little flour into them & mix so that they will not fall to the bottom of the cake.  Add with the flavoring to the first mixture, then work in the flour, turn into a loaf pan & bake slowly for 2 hours.

Mincemeat Cookies                    

1 cup brown sugar, 1 cup white sugar, 1 cup shortening, 3 eggs, 4 cups flour, ½ teaspoon soda, 1 teaspoon cinnamon, 1 grated nutmeg, 1 ½ cups mincemeat.

Mix in the order given & form into rolls 2 inches in diameter.  Chill overnight, slice thinly & bake 10 or 12 min. in a hot oven.

Green Tomato Mince Meat                              

3 lbs. green tomatoes

3 lbs. tart apples

2 lbs. raisins

8 cups brown sugar

2 tablespoons salt

1 cup suet

1 cup vinegar

2 tablespoons cinnamon

2 teaspoons cloves

1 teaspoon nutmeg

1 lemon, juice and grated rind

1 orange, juice and grated rind.

Chop the tomatoes, and drain.  Measure juice and add an equal amount of water to pulp.  Scald mixture and drain off liquid.  Repeat twice of adding fresh water, scalding and draining.  To the mixture add chopped apples, sugar, raisins, salt and suet and cook until (?).  Add remaining ingredients and cook mixture until thick.  Pack immediately into hot jars and seal at once. 

Brown Sugar Cookies        

3 eggs, 1 1/3 cup brown sugar, 2/3 cup butter & lard mixed, 1 teaspoon vanilla, 2 teaspoons baking powder.  A little salt, 3 rounding cups flour.

Pack sugar solidly in cups.  Cream sugar, butter, lard and eggs well beaten.  Add flour, salt and baking powder sifted together.  Bake in quick oven.
