Chicken Continental From Mary Gentry
3-4 lbs. frying Chicken pieces
1/3 c. seasoned flour
¼ c. butter
1 can cream of chicken soup (or cream of mush; cream of celery)
3 ½ T. chopped parsley
1 t. salt
1/8 t. thyme
½ t. celery flakes
1 1/3 c. minute rice
½ t. paprika
1 onion – chopped
Roll chicken in flour – sauté in butter until brown. Mix soup, onion, seasonings in same pan. Gradually stir in 1 c. water & bring to a boil stirring constantly. Pour rice in shallow 2 qt. casserole or pan. Stir all except 1/3 c. soup mixture into rice. Top with chicken &pour remaining soup mixture over rice. Cover & bake 30 min. (or longer) @ 375degrees. Sprinkle paprika.
