Lobster Toast
Take one third of a tin of lobster, separate it, put it into a saucepan, with a little cayenne, mace, salt & butter; warm it gradually, add a good squeeze flavor (Lemon). When quite hot, spread it on toast slightly buttered on both sides & serve hot.

Stuffed Tomatoes
Dip some tomatoes in hot water, peel them, cut them in half & remove the pips. Rub a baking sheet with shallot, butter it well & lay the tomatoes on it filling each half tomato with the following: two parts breadcrumbs, one part ham finely minced pepper & salt. Put a piece of butter on each half tomato & bake them a quarter of an hour. Have ready some round pieces of toast; on each of these put half of a tomato & serve hot.
