Birthday Cake 1875
1 pd ¼ sugar
¾ pd. Butter
1 pd. ½ flour
7 eggs
1 cup milk
1 teaspoon of soda dissolved in it.
2 teaspoons of cream tartar sifted into the flour.
Rub sugar & butter together, then add the eggs well beaten, then the milk, flavor with lemon extract & salt, then stir in lightly the flour in a little at a time. Bake in a deep buttered pan. 1 pd. of currants is an improvement.

Birthday Cake Layers
¾ cup butter or substitute
1 ½ cup sugar
2 ¾ cups cake flour
½ tsp. salt
3 tsp. baking powder
1 cup water
1 ½ cups nuts chopped
4 egg whites beaten
Bake in layers & bake at 350degrees 35 – 40 min.
