Peach Torte
½ c butter Meringue
½ c sugar 4 egg whites
4 egg yolks 1 c sugar
5 T. milk few drops almond extract
1 c flour or ½ t. vanilla
1 ½ t. bkpd.
Cream the butter and add the sugar gradually, creaming very thoroughly. Add egg yolks and the milk, & beat hard, then mix in the flour sifted with the Bkpd, and spread the thick batter in a thin layer in a buttered shallow baking pan. Now beat the egg whites stiff, beat in the sugar and flavoring, and spread over the batter in the pan. Bake 20 minutes at 325degrees, and serve warm. Cut in squares surrounded with sliced fresh peaches and topped with whipped cream. I usually make up half this recipe & bake it in an 8”x8” cake pan, and find it ample for serving 4 – 6 portions.
