September 2, 1925; Nut Wafer Cookies & Three Egg Angel Cake, The Olson Family Cookbook

Sauris North Dakota 1920’s – 30’s  

Nut Wafer Cookies                                              

1 cup brown sugar

1 cup white sugar

1 ½ cups melted Crisco (butter or lard)

1 teaspoon salt

5 cups pastry flour, sifted 2 X. (X means 2 times)

3 eggs, well beaten

2 tsps. Soda

1 tsp. cinnamon or other spices

1 cup chopped nuts

       (Blanched almonds are best)

-Cream Crisco with sugar.  Add eggs slowly mixing thoroughly.  Add nuts.  Then dry ingredients, sifted together twice.  Shape into roll about 2 ½ or 3 inches in diameter.  Put in Criscoed pan in ice box overnight.  When ready to bake, slice and bake in hot oven (425 F.)  Makes about 75 cookies.

Three Egg Angel Cake                           

Oven temperatures are seldom given in the old books and recipes; most times the only say something like a slow oven or quick oven.  These are the equlivent to today’s oven temperatures;

A very slow oven equals 250 to 275 degrees.

A slow oven equals 300 to 325 degrees.

A moderate oven equals 350 to 375 degrees.

A hot or quick oven equals 375 to 400 degrees.

A very hot oven equals 400 to 450 degrees.
