Holiday Cookies #4 From Sauris North Dakota 1920’s – 30’s All kinds of Wonderful Cookies!

Boston Cookies  

1 cup butter                                        3 ¼ cups flour

1 ½ cup sugar                                     ½ tsp. salt

3 eggs                                                  1 tsp. cinnamon

1 tsp.                                                   1 cup chopped nuts

1 ½ tbsp. hot water                          1 cup raisins

(Dough must be quite soft)

Note: 2 tsp. baking powder to 1 cup flour when no eggs are used.

Nut Cookies

2 eggs                                                6 tbsp. flour

1 cup sugar                                       salt

1 cup nuts                                         2 egg whites

Coconut Cookies     

2 cupfuls brown sugar                   3 cupfuls of flour

¾ cupful of shortening                  1 teaspoonful of cream of tartar

2 beaten eggs                                 ¼ teaspoonful of salt

1 teaspoonful of vanilla                2 cupfuls of coconut

1 teaspoonful of soda

Cream the sugar and shortening together.  Add the beaten eggs and vanilla and mix.  Add the soda dissolved in 1 tablespoonful of hot water, then the flour sifted with the cream of tartar and salt.  Add the coconut and mix to a dough.  Shape into two long rolls, chill until firm, then slice and bake in a moderate oven of 400 degrees for about 12 minutes. 

A fine recipe.

Brown Sugar Cookies        

1 cup brown sugar

1 cup butter

2 eggs

2 tsps. Cream tartar

1 scant tsp. soda

1 tsp. flavoring

3 level cups flour

Roll in small balls with hands and pat down with fork or if you prefer you can place a nut on the top or raisins

Chocolate Rocks                                                 Both Good   

This is a small recipe – so better make a double portion

1 c brown sugar

½ c melted butter

½ c sweet milk

1 ½ c flour

½ tsp. soda

1 egg

1 c walnuts

2 sq. melted chocolate

Frosting

Powdered sugar

Cocoa (about 2 tbsp.)

1 tbsp. butter

Coffee

Put the frosting on the rocks while they are lukewarm – for best results.

Kringler                          

1 cup sugar

4 egg yolks

½ cup sour cream

½ tsp. soda (in cream)

3 cups flour or more

(1 cup butter)

Enough for soft dough to be rolled

Roll Cookies                         

1 cup butter                                          ½ tsp. salt

2 cups brown sugar                             vanilla

2 eggs                                                    3 ½ cups flour

1 level tsp. soda

Cook 1 pkg. dates (cut up fine) with about ½ cup water – 1 small cup sugar.  Spread date mixture on rolled out dough.  Roll up.  Freeze & slice.

Brown Cookies        

2 cups brown sugar

2 cups molasses

2 tsp. soda stirred in water

4 eggs

Let stand overnight and bake in the morning add ½ cup butter.

(What, no flour!)

Fruit Cookies                       

1 c. raisins (grinded or chopped) Flour them and set them aside.

1 ½ c. brown sugar and 1 cup shortening beaten together.  When creamy add 1 beaten egg, 6 tbsp. sweet milk, 1 tsp. baking soda, and enough flour to make stiff batter.  Add floured fruit, with nutmeg, cinnamon, and cloves to taste.  Add flour enough to make a stiff dough; roll rather thin, and bake in quick oven.
