Saratoga Potatoes

Shave thin, soak in ice water 30 minutes, fry in boiling lard to light brown; drain and salt.  Serve hot in folded napkin. 

I posted a recipe for Saratoga Potatoes earlier this month from 1875, and in this new book I find another one.  It is very interesting to find repeat or similar recipes as you go through these books.
