Cabbage and Apple Salad
3 c. shredded cabbage sour cream
1 c. chopped apple vinegar
Salt and paprika sugar
Mix cabbage and apple and season lightly with salt, sugar and paprika. Toss with silver fork till seasoning is well mingled, and add just enough thick sour cream to bind the ingredients together, and only enough vinegar to give a piquant flavor. the success of this salad depends on the artistry of the mixer, as either too much vinegar or this cream will result in a sloppy unappetizing dish. All ingredients should be very cold. Serve at once with cream wafers.

Fried Cakes
2 eggs unbeaten
1 cup sugar (big)
3tsp. hot compound (?)
1 t. salt
1 cup sour cream or buttermilk
2 cups sifted flour
2 tsp. hot water
¼ t. ginger
½ T. grated nutmeg
1 t. soda
If buttermilk is used take use 2 tsp. shortening. 3 dozen cakes.
I am not sure what they mean by 3 tsp. hot compound; this may not be the correct word.
