A Good Economical Layer Cake               

1 ½ cups flour

1 cup sugar

3 tsp. baking powder

2 eggs

Milk

5 tbsp. melted butter

Flavor to taste.

Put flour in mixing bowl, with sugar and baking powder.  Take measuring cup and break eggs into it and fill up with milk and add dry ingredients.  Lastly, add butter and beat.

Use moderate oven.  Is just as successfully made in loaf cake – more so even.

English Christmas Cake                                

¾ lb. butter

1 lb. brown sugar

2 lbs. currants

2 lbs. raisins

1 lb. dates

10 eggs (8 will do)

¼ lb. almonds

¼ lb. walnuts

½ cup molasses (or rose water)

½ teaspoon cloves

1 teaspoon allspice

1 teaspoon mace

1 teaspoon mixed spice

Vanilla

¾ teaspoon soda

5 cups five roses flour

¾ or 1 cup brandy

No directions, this is one of those you have to know how to cook/bake.  Treat is just like any other bake, cream the butter and sugar together, then add the eggs and wet, alternating with the dry ingredients.  I would also soak the fruits and nuts in the brandy over night before you make it.   Sift all dry ingredients together before adding and add the fruits last.   If it is like other fruit cakes/breads you will need to stir the fruits in by hand as it will be a very stiff batter. 

Fruit Cake      

1 cup                                                       2 cups dates

1 cup brown sugar                               2 cups figs

1 cup sweet milk                                  2 cups walnuts

1 cup butter                                          3 teasp. B.pwdr.

5 eggs                                                    ½ teasp. Nutmeg

4 cups flour                                          ½ teasp. Cinnamon

3 cups raisins                                       ½ teasp. Allspice

2 cups currants

1 cup citron

Bake 3 hours.
