Peaches for Desserts, Fritters and Salads
Peach Fritters
4 peaches
1 cup flour
1 egg
¼ teaspoon salt
1 tablespoon sugar
½ cup milk
Pare and cut peaches in quarters; dip in the batter, which should be thick, and fry in deep, hot fat until nicely browned. Remove from fat, drain well, sprinkle with sugar or serve with a fruit sauce.
Batter: Sift the flour, salt, sugar and baking powder into bowl; add the well-beaten egg and milk enough to make a rather stiff batter.

Peach Cobbler
Wash, pare and quarter enough peaches to fill a deep baking dish three quarters full; sprinkle with sugar, and cover with a moist biscuit dough. Pour a little milk over the top, sprinkle with a little sugar and dot with butter. Put lid on bake dish and bake for 25 minutes in ana oven of 400 degrees F., remove cover and bake 20 to 25 minutes longer. Serve hot with milk or cream.
Peach whip
2 cups finely crushed peaches
½ cup sugar
1 tablespoon granulated gelatine
1 teaspoon lemon juice
Soak gelatine in two tablespoons of cold water ten minutes; add 1cup of boiling water, the sugar and lemon juice and stir until dissolved; add the peaches. Set in bowl of ice water and beat until it begins to form; put into ice cream glasses. Cut one peach into pieces and garnish top. This may be served with whipped cream
