December 27th, Holiday Baking #57, 1950 Eggless Butterless Fruit Cake & Xmas Twist Houska
Berwin Illinois 1950’s through 1980’s.
Eggless, Butterless, Fruit Cake Mary’s Cake Recipe
2 cups raisins (the dark raisins preferred)
2 cups brown sugar
2 cups dates
1 cup (??) (I prefer Crisco)
Place these ingredients in a sauce pan and simmer for 20 minutes. Then let this cool and then add the dry ingredients.
Sifted
3 ½ cups flour
2 teaspoons baking soda
2 teaspoons cinnamon
½ teaspoon salt
Sift these dry ingredients three times, then add to liquid mixture.
(2 tsp. Vanilla)
1 cup of chopped nut meats mixed with two tablespoons of flour. Then fold them into the cake dough. Pour into greased & floured pan.
I like to add a teaspoon of vanilla even though it is a dark dough cake. Although the recipe does not call for it.
My recipe does not show how long to bake the cake or what temperature. I bake it in 300degrees oven about hour or a little over. I watch the cake after its in the oven about 45 minutes. It’s a heavy cake so its better to bake it slow. I hope your cake turns out good. So long Sis. From your sis, Bess. 12-27-50
