August 1st, 1850 & 1875 Cracker Pie, 1912 Croquettes of veal, lamb or Chicken & 1950’s Macaroni Salad

Burlington Vermont 1875

August 1st 1875

Cracker Pies (4)

3 crackers

3 eggs

2 cups sugar

1 cup vinegar

½ cup water

1 cup raisins

½ cup butter

All kinds spice

Avondale Pennsylvania 1912

August 1st 1912

Croquettes of Lamb or Veal or Chicken

2 cups of ground meat

2 tablespoons of butter

2 tablespoons of flour

1 cup of milk

1 teaspoon of salt

¼ teaspoon of pepper

Dash of cayenne pepper, nutmeg

1 egg

Scald milk or cream.  Rub butter and flour together and stir into the milk until it thickens, add seasoning.  Take from the fire and add the egg, place over the fire again and heat for one minute add the meat mixture, when heated pour on a flat dish.  In 2 more hours when it will be ready to mold, dip in egg and cracker crumbs and set aside for about an hour before frying.  Every particle should be covered with crumbs to prevent the fat from soaking in, Fry in basket.

As an ongoing feature here, I will add to this each day the recipes out of several books I have that are dated or from calendar books

A small leather covered calendar book from Burlington Vermont dated 1875.  It has all kinds of lovely handwritten dessert recipes; the front of the book has an overview of each month and a predictive weather chart, the difference of tie between Boston and New York, the value of gold and silver at the time and other interesting things like rates of postage.

Another version of this Cracker Pie from Glenburn Maine

Glenburn Maine in the 1850’s, a lovely handwritten cookbook. 

Cracker Pie

3 crackers

2 cups water

1 cup sugar

1 cup molasses

1 cup butter

½ cup vinegar

2 eggs

Spice & raisins to taste.

Macaroni Salad

4-6 servings

1 pkge (8oz) elbow mac.

1 c. mayon. (mayonayse)

2 T. Ch. Onions

½ c. ch. Sweet pickle

¼ c. ch. Stuffed olives

1 T. prepared mustard

1 can (7oz) tuna – flaked

Cook mac. Drain & chill.  Combine remaining ingred.  Add mac. Mix well 

Pkge = package. Ch = chopped, ingred = ingredients
