Graham Gems
1 cup graham flour
1 tablespoon butter
2/3 cup Buttermilk
1 tablespoon sugar
1 egg well beaten
Scant teaspoon soda
Beat well, grease tins and have them hot, bake in quick oven.

Nesselrode Pie or Pudding Frances
1 tbsp. (?)plain gelatin
¼ cup (? May be sugar) cold water
2 cups (? May be milk) milk
2 eggs
Pinch of salt
4 cup & 6 tbsp. sugar
1 ½ tsp. vanilla
Soak gelatin in cold water 5 min. Scald milk in boiler. Beat yolks, stir in salt & ¼ cup sugar, add scalded milk slowly to yolks. Return to boiler, cook until slightly thick/, remove from heat, add gelatin chill until think. Beat whites add 6 tbsp. sugar. Fold in custard, add vanilla. Chill. Sprinkle with cocoanut or shread chocolate.
