April 2nd, 1912 Grape-Nut Pudding & Nut Brittle Cream & from the Olson Family Cookbook, 1926 Fruit Cake

April 2nd 1912
Grape-Nut Pudding
Pour 1 cup of boiling water over ½ cup grape-nuts, let cool.
½ cup raisins or dates
½ cup sugar
½ tbls. Butter
½ cup nuts
2 eggs separated
1 tsp. cinnamon
Mix all, fold in egg whites last. Bake ¾ hr. Serve with whipped-cream.

Nut Brittle Cream
2 cups whipped cream
1 cup crushed peanut brittle
Add crushed peanut brittle to whipped cream. Pour in moulds and freeze 3 hrs.
Hrs. = hours; tbls. = tablespoons; tsp. = teaspoons; hr. = hour.

Fruit Cake
2 pounds butter 20 eggs
2 pounds sugar 1 tsp. soda
3 pounds flour 2 tsp. cream tartar
2 pounds currants 1 tbsp. mace
2 pounds raisins 1 tbsp. cinnamon
1 ½ pound citron 2 tsp. cloves
3 cups molasses 2 grated nutmegs
Bake 3 hours.

From Saris North Dakota a cookbook from Mrs. R. Olson, dates found are 1920’s through 1930’s. This has several recipes in Swedish. This book has a bunch of dates in it to Experiment with.
