Eulalie’s Salad Dressing

2 eggs

1 t. Sugar

1 t salt

1 t flour

1 t mustard

¾ cup sweet milk

½ cup vinegar

Butter size of egg

Avondale Pennsylvania 1912

Apple Mint jelly

1 cup chopped mint leaves and tender stems

¼ cup boiling water

¼ cup sugar

4 cups strained cooked apple juice

2 ½ sugar

Green coloring

Combine mint, boiling water and sugar, and let stand overnight.  Heat to boiling and strain through cheesecloth.  Heat apple juice in large bottle, add sugar and stir over heat until sugar is dissolved.  Add strained mint flavoring and enough green coloring to give desired tint.  Bring to boiling and cook over high heat to the jelly test.  Skim and pour into hot sterilized glasses.  Cool until jelly (?) set and seal with hot melted paraffin.  6-8 ounce glasses.

Tomato Catsup                                    Myra’s Recipe

Cook one gallon of choice ripe tomatoes, strain them and cook again until they become quite thick; about 15 minutes before taking up.  Put in to them a small level teaspoonful of cayenne pepper, one tablespoon of mustard seed.  Half tablespoon whole cloves, one tablespoon whole all spice, all tied up thin muslin bag.  At the same time add one heaping tablespoon of sugar, and one teacup of best vinegar and salt to suit the tart, seal up air tight in bottles or jugs.  This is a variable Southern recipe.  Written Sept 15th 1925
