Holiday Baking #47, Early 1900’s Chocolate Walnut Wafers, Husband’s Cake, Pumpkin Pie, One-Crust Sugarless Apple Pie & Cookies

Pasadena California in the early 1900’s

Chocolate Walnut Wafers      

 ¼ cup butter                                 ¼ cup milk

½ cup powdered sugar                1 cup sifted flour

2 sq. Choc.                                     1/8 teasp. Salt

¼ teasp. Cinnamon                      ¾ cup walnuts

Cream together the shortening, salt & sugar.  Add the grated Choc. & cinnamon & blend thoroughly.  Add the flour alternately with the milk.  Spread the batter on a well-greased pan.  Sprinkle with the chopped nuts & press the nuts into the batter.  Bake in oven (350degrees F) for 15 min.  When done, cut in 2 in. sqs. & sprinkle with powdered sugar. 

Choc. = chocolate; sq. & sqs. = squares; teasp. = teaspoons

Husband’s Cake                      

¾ cup Crisco                                         3 tsp. baking powder

1 ½ cups sugar                                     1 ½ tsp. cinnamon

1 cup tomato soup (canned)            1 tsp. cloves

¾ cup water                                       1 ½ tsp. nutmeg

1 teasp. Soda                                     1 ½ cups raisins

3 cups flour                                        1 ½ cups chopped nuts

¾ tsp. salt

Blend Crisco & sugar.  Combine tomato soup with water and soda.  Add to Crisco mixture alternately with sifted dry ingredients.  Stir in raisins & nuts.  Bake in moderate oven (350degrees) about one hour.

Cheese Fondant Icing

To 2 packages cream cheese slowly add 1 egg yolk & 3 cups of conf. sugar, a cupful at a time.  Add 1/8 tsp. salt & 1 tsp. vanilla.

Pumpkin Pie                          

1 cup pumpkin

½ tsp. salt

½ tsp. ginger

½ tsp. cloves

2 tsp. cinnamon

3 eggs

1 cup of Eagle’s sweeten condensed milk

1 cup water

Unbaked pie crust

Mix together in order.

Sugar Cookies

2 cups sugar, 1 cup butter, 1 cup milk, 2 eggs, 1 tea-sp. soda, flour to roll soft. 

One-Crust Sugarless Apple Pie

Four apples pared and cooked with 2 tablespoons of honey for sweetening, ½ cup water added.  Cook until tender.  Have one crust ready browned as for lemon pie.  Place on your apples, cut 6 or 8 marshmallows over the top and let brown a golden color.  You will say how delicious, and such a saving, too.
