Scotch Eggs
Required (for six people) 3 hard boiled eggs, ½ lb. uncooked sausages, 1 raw egg, bread crumbs & frying fat.
Remove the shells & place the eggs in cold water. Skin the sausages. Dip each egg in flour then coat each over with a layer of sausage meat being careful to keep the shape of the egg. Next, beat up the raw egg on a plate, brush it over the egg then roll in crumbs. Fry in boiling fat a golden brown. Drain & serve cut in half on small rounds of fresh or toasted bread.

Strawberry Shortcake
Ingredients: ½ lb. flour, 3 tablespoons butter, 1 cup sour milk, 1 beaten egg, 1 teaspoon carbonate soda dissolved in milk & 2 ½ of salt.
(I think it is 2 ½ teaspoons of salt)
Mode: Mix as light as possible & roll into 2 sheets ½ in. thick. Lay one on the other & bake for 20 min. in a brisk oven. Separate 2 crusts & lay strawberries 2“ thick on under sheet. Lay on other crust cut into triangles & (?) (deglaze or decorate) with sweetened cream.

At this time period Carbonate of soda is either baking soda or saleratus; they were used interchangeably, and often called the same thing. When it says lay one on the other & bake, I think it means put in the oven at the same time, not to place the pans or rolled batter on top of each other to bake.
Brisk oven is; 375 to 400 degrees.
