Potato Cheese Cakes                        

1 lb. potatoes, 4 table spn. Sugar, ½ teaspoon salt, the rind of a lemon grated, 3 oz. butter, 4 oz. currants, 3 or 4 eggs, boil & mash potatoes, add butter (?& currants), adding eggs last of all & well mix.Spn. = spoon

Short Crust                           

6 ozs. Of bread flour, 4 oz. butter, a tablespoonful of castor sugar, yolk of one egg, a few drops of lemon juice, a little cold water; pass flour thru sieve, salt. 

Syrup Tart                            

Short pastry: ½ lb. flour, 3 oz. lard or dripping, 1 teaspoon bakg pr. Salt. Mixture: 6 ozs. Golden syrup, rind & juice of ½ lemon, 2 tea cups bread crumbs, 1 oz. butter.  Just melt the butter, add syrup to warm.  Bread crumbs in bowl & lemon rind & juice; pour syrup over five shallow tins, fill with mixture & bake. 

Bakg pr. = baking powder; drippings are the left-over fat from cooking a roast or other types of meat in the bottom of the pan.  Most often used for making gravy, using it for a pastry is not common. 

Victoria Sandwich               

1 teacupful of flour

1 teacupful of sugar

½ a package of baking powder

2 eggs

A piece of butter the size of an egg.
